Today has been a busy day. I have taken my son to a Dr Appt, went to my friend’s ground breaking ceremony, had lunch with a friend and her daughter and grocery shopped at 2 stores. I am beat!! Luckily, I found some good deals and am done for a week. We are pretty stocked up on groceries so I picked up some milk, eggs and stuff to add to the stockpile. While I was at Fry’s I noticed a sign that they are tripling and quadrupling coupons again up to $1. Woo Hoo!! Chocolate Chip Cookies Ready To Go

My friend Kelly recently started a blog about being organized. While I feel I am fairly organized, there is always room for improvement. Recently she posted a tip on having frozen cookies ready for spur of the moment events. While I was baking today I decided to try out her recipe. I baked up 15 cookies for snacks and put the rest in the freezer. Once these are frozen I will put them in a baggie and have them on hand for later use. I will admit that I ate a couple hot cookies. Hey I had to let you know how they tasted. Boy, were they good!!

Ingredients: 2 sticks unsalted butter; softened 2 cups brown sugar ½ cup white sugar 2 eggs 3 tsp vanilla 4 cups flour 2 tsp baking soda 1 tsp salt 2 cups chocolate chips (1 bag) 1. Preheat oven to 350 degrees. 2. Mix together butter, brown sugar and white sugar. 3. Add in eggs and vanilla; mix 4. Stir in flour, baking soda, salt and chocolate chips; mix together. 5. Either bake for 8-10 minutes or freeze. You can either freeze in scoops or roll into a log that you can slice up later.

Zucchini Bread

I was looking over my blog recently and realized it looks like all we eat is boxed food. While we used to eat a lot of that, we don’t do it as much anymore. My friends Claire and Jen B. are both really good cooks and have taught me a lot. I get a lot of really great recipes off their blogs that are now family favorites. When I grocery shop I try to stock up on items when they go on sale at their lowest price and match them with coupons. That is why I usually have a bunch of the same item. Then I store them and we use them as needed. This has allowed me to lower my grocery budget to between $250 & $300 a month but also have enough food stockpiled to last us a month or more. One of my goals this year is to keep my grocery budget under $250. This will include dog food, diapers and any cleaning or paper products. In an effort to do that I am working on making things from scratch and reducing the amount of meat we eat. If a recipe calls for 1 lb of hamburger, I use ½ lb. Another way to help reduce cost is not waste anything. We eat all leftovers for lunch the next day. Not only does this cut down on waste but also gives me one less meal to plan. When I was going through my fridge before yesterday’s grocery shop I ran across two zucchini I bought last week but we hadn’t eaten yet. What better way to use them up then to make Zucchini Bread. Yummy!!
INGREDIENTS 3 eggs 1 cup vegetable oil (I used ½ cup vegetable oil & ½ cup applesauce) 2 cups white sugar 2 cups grated zucchini 2 teaspoons vanilla extract 3 cups all-purpose flour 3 teaspoons ground cinnamon 1 teaspoon baking soda 1/4 teaspoon baking powder 1 teaspoon salt 1/2 cup chopped walnuts 1 cup brown sugar 1 cup flour 2 Tablespoons butter or margarine 2 teaspoons cinnamon ½ cup chopped walnuts DIRECTIONS Preheat oven to 325 degrees F ( 165 degrees C). Grease and flour two 8x4 inch loaf pans. In a large bowl, beat eggs until light and frothy. Mix in oil and sugar. Stir in zucchini and vanilla. Combine flour, cinnamon, soda, baking powder, salt and nuts; stir into the egg mixture. Divide batter into prepared pans. Mix together brown sugar, flour, cinnamon, melted butter & walnuts. Sprinkle on top of the batter prior to baking. Bake for 60 to 70 minutes, or until done

CVS Trip January 18th

I realized today that I had ECB’s that were going to expire in two days. I can’t have that happening so I took advantage of nap time and headed over to CVS. We don’t need anything so I looked for items that were free or cheap so I could roll my ECB’s. Of course I was side tracked by the 90% off Christmas stuff. Clearance is my weakness. I broke my trip up into several transaction to pay the least amount out of pocket. A few months back when food prices started going up I panicked and raised my grocery budget to $300. I have since evaluated my purchases and realized by doing that I gave myself too much room to buy junk I don’t really need. So I have put my food budget back to $250. In an effort to stay within that budget I am going to try shopping the deals at both Safeway and Fry’s. I know I don’t have the patience to take a kid (soon to be two kids) to two stores so I will get up early to go to at least one of them alone. I started that effort today and got up at 6 to shop Safeway alone. Walgreens Trip January 4th

I haven’t been shopping in a couple weeks due to having a large stockpile so not much to report. I did make a quick trip over to Walgreens today for a couple of free items. They both had a low limit so I couldn’t get much and may make another trip later in the week.
