Fry's Trip October 27th

I know it has been a long time since I posted. We are being relocated to another state for my husbands job so we have been doing a lot of eating from our stockpile and not much shopping the last month and a half. My plan was to hold off on posting until after the move so I can post my finds as I rebuild our stockpile. After a quick run to Fry's this morning for milk and stamps I just couldn't old in my excitement. Fry's is running a sale where you buy 4 granola bar type items and you save $4 which leaves them $1.57 a box. I had some coupons for the granola bars and nut clusters so I decided to grab a few while I was there.
Guess how much I paid for the items below?
Well we know it is at least $8.80 since I bought stamps...$9.03. So basically I paid .23 for everything else. I was so excited. I already have it all in boxes ready for our move (except the milk).
I may not post again for 2-3 weeks unless I find some smokin deals. Until then...have a great Halloween!!

Missing in Action

I am still here!! The last several weeks have been a little crazy and stressful around here. While I am still doing my best to find good deals, I am having a hard time finding time to post them. My husband has been offered a new position within his company which is requiring us to relocate. The next couple of months will be a little rough around here with us showing our house and preparing for our move. I will post when I can but if not I will for sure get back into it after our big move.

CVS Trip July 12th

I love clearance! I walked into my CVS today and found the 4th of July items on 90% clearance. These will be fun to get out next year. I started out my trip with $4.96 in ECB's. I spent $3.51 OOP and ended up with $4.95 in ECB's.

Yard Sale July 11th

Growing up my mom and I would go to yard sales every weekend. It was always fun to see what kind of cool things we could find for super cheap. I have recently started taking an hour out of my Saturday to hit up a few yard sales. It is funny the things I find that I didn't even know I was looking for. I spent $5.10 on this stuff. My 3 year old loves it when I get home because I always bring him something fun to play with.

Fry's & Safeway Trip July 10th

I am trying to get rid of some of the things in our pantry so instead of a normal grocery trip, I just bought a few things that we were running low of in the stockpile. Some how I threw my receipts away before typing this up so I am just going to give the amounts.
At Safeway I just bought chicken and bacon. I spent $25.69 and saved $36.57 which is 59%. My son wanted to be in the picture with the groceries from Fry's. Not pictured is a case of Powerade and two bags of Iam's dog food. I spent $67.39 and saved $39.41 which is only 37%.

I found a $10 off $20 purchase coupon on the front of my newspaper so decided to go check out the store. I haven’t been there much but heard they had good clearance deals. Boy am I glad I went. I could have spent some serious money in there. They had so many cute boy items on clearance. I refrained and just got a few things. I went to a few yard sales today. I got all this at two yard sales and only spent $6.25. Two of the things (Match Box airplane and a Diego coloring book) are still in their original packaging and will be used as Christmas gifts. The wrapping paper is also brand new.

Fry's Trip June 5th

I didn’t do much shopping last week so this week I did a big shop. Not so much a lot of items but a lot more then I normally spend. I went to both Fry’s and Safeway. I found a bunch of new recipes I wanted to try and was missing items for all so had to buy several items that were not on sale. I seem to have a lot less time now that I have two kids so I am just going to jot down the best deals from now on. Safeway is running another Mix & Match sale where you buy 10 participating items and they take $5 off your bill. There were a few things we eat included in the sale so I decided to check out the sale. Not only that, but raspberries are on sale for $.88 a carton. That is a great deal. I got there and they were completely out. When I went to check out I asked about them and they brought me up some that had just arrived on the truck. I am now in the process of freezing a bunch of raspberries. Yummy!! Safeway Trip May 15th

I had the $5 CRT from last trip I needed to use so I tried to keep my cost as close to $5 as I could. There wasn’t much on sale and we are really stocked up so I just picked up a couple of items. I paid 0 out of pocket and she actually paid me .32 to take my groceries home. The receipt says that is a savings of 102%. That is a first for me. Woohoo!!!

I got up this morning and went to a couple of yard sales. I found a great one that had something the boys would love. Well actually that Trevor would love. I got this train for $10!! It was actually meant for Cole but I knew Trevor wouldn't stay off of it. He was so excited as soon as I walked in the door with one of the tracks.
I also got 2 baskets and a long sleeved shirt for .50 each. I had a great time and hope to get out to yard sales more often.

Baking Day-Strawberries

Strawberries were on sale this week so I got a couple of containers and tried some new recipes. Both were pretty tasty although I didn't like the Strawberry Butter that was listed with the muffins. It never set up right so was a weird consistancy.
Strawberry Coffee Cake Ingredients
1 cup all-purpose flour 1/2 cup sugar 2 teaspoons baking powder 1/2 teaspoon salt 1 egg, beaten 1/2 cup milk 1 teaspoon vanilla 2 tablespoons butter, melted 1 1/2-2 cups sliced fresh strawberries
Topping
1/2 cup all-purpose flour 1/2 cup brown sugar 1 teaspoon cinnamon Few grates of fresh nutmeg 1/4 + 1 Tablespoon cup cold butter 1/4 cup chopped pecans
Directions
1. In a mixing bowl, add the flour, sugar, baking powder and salt; stir to mix. 2. In a second bowl, add the egg, milk and butter; stir to mix; add to dry ingredients and stir just until moistened. 3. Pour mixture into a greased 8-inch square baking dish. 4. Place strawberries evenly over the top of batter.
To make the topping:
1. Combine the flour, sugar, cinnamon & nutmeg in a bowl. 2. With a pastry blender, cut in the butter until consistency of coarse crumbs. Stir in pecans. 3. Sprinkle mixture evenly over the strawberries. 4. Bake at 375° for 30-35 minutes or until wooden pick comes out clean.
Strawberry Sweetheart Streusel Muffins Ingredients
1 3/4 cups all-purpose flour 2/3 cup granulated sugar 2 teaspoons baking powder 1/2 cup milk 1/2 cup butter, melted 2 eggs, beaten 1 teaspoon vanilla extract 1 cup fresh strawberries, chopped and tossed lightly in 2 tablespoons flour
Streusel
1/4 cup chopped toasted pecans 1/4 cup brown sugar, packed 1/4 cup all-purpose flour 2 tablespoons butter, melted
Strawberry Butter
1/2 cup butter, softened 1 cup confectioners' sugar 1/2 cup chopped fresh strawberries 1/4 cup finely chopped toasted pecans
Directions
1. Preheat oven to 375°F. 2. Grease bottom and sides of 18 cup muffin tin/s 3. Mix together ingredients for streusel and set aside. 4. Mix together for the muffins the flour, sugar, and baking powder. 5. Separately, mix together the milk, melted butter, beaten eggs and vanilla. 6. Gently mix the wet ingredients into the flour mixture. 7. Fold in lightly floured chopped strawberries. 8. Pour mixture into prepared muffin tins and top with streusel mixture. 9. Bake at 375F for 25-30 minutes until toothpick comes out clean. 10. Allow muffins to cool for 10 minutes before trying to remove them from the pan (or they will stick). 11. Finish cooling muffins on a wire rack. 12. To make strawberry butter, mix together thoroughly the soft butter and powdered sugar. Fold in the strawberries and toasted pecans. Chill until needed and soften before serving on split muffins

Baking Day- Lemons

My husband brought home a bunch of lemons that a Co-worker brought into to work. They were the best tasting lemons I have had in awhile so I decided to have a baking day. I found some recipes on Recipezaar that sounded really good. They all turned out really good. My favorites were the lemonade and the lemon bars. I could eat the whole pan.
Lemonade
1 1/2 cups fresh squeezed lemon juice
7 cups cold water
1 cup sugar
Mix all the ingredients together. Chill and enjoy!!
Lemon-Pumpkin Mini Muffins
Ingredients
1 3/4 cups flour 1/4 teaspoon nutmeg 1/4 teaspoon cinnamon 1 teaspoon baking soda 1/2 teaspoon baking powder 1/2 teaspoon salt 1 cup sugar 1/2 cup packed brown sugar 2 eggs 1/3 cup vegetable oil 1 cup canned pumpkin 1 lemon, juice and zest of
Directions
1. Preheat oven to 350. 2. In a large bowl combine sugars eggs and oil. 3. Add pumpkin, lemon juice, zest and spices. Stir until well blended. 4. Add dry ingredients and stir until just moistened. 5. Spray mini muffin tins with cooking spray. 6. Fill 2/3 full. (about 1 T each). 7. Bake 15 minutes. 8. Turn out on cooling rack and allow to cool.
Lemon Bread
Ingredients
2/3 cup butter
2 cups sugar
4 eggs
3 cups flour
3 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
1 cup chopped nuts
1 tablespoon grated lemon, rind of
TOPPING
2/3 cup sugar
4 tablespoons lemon juice (not concentrate) Directions 1. Preheat oven to 350- grease two 9x5 loaf pans.
2. Beat shortening& sugar until light& fluffy.
3. Add eggs one at a time, beating well after each addition.
4. Stir in dry ingredients alternately with milk.
5. Add nuts& lemon peel.
6. Pour batter into prepared pans and bake 50-60 minutes or until tests done.
7. Cool in pans 10 minutes before removing.
8. Put a sheet of foil under wire rack; place breads top-sides up on the wire rack.
9. Blend topping ingredients, and brush on tops of loaves while still warm.
Lemon Tea Muffins
Ingredients
2 cups unsifted flour 2 teaspoons baking powder 1/2 teaspoon salt 1 cup margarine or butter, softened 1 cup sugar 4 eggs, separated 1/2 cup lemon juice 1/2 cup finely chopped nuts-optional 2 tablespoons light brown sugar 1/4 teaspoon ground nutmeg
Directions
1. Preheat oven to 375 F. 2. In a medium bowl, mix the flour, baking powder and salt. 3. In a large bowl, beat the margarine and sugar until fluffy. 4. Add the egg yolks and beat until light. 5. Gradually stir in the lemon juice, alternately with the dry ingredients. 6. In a small bowl, beat the egg whites until stiff but not dry. 7. Fold 1/3 of the the egg whites into the batter, then follow with the remaining egg whites. 8. Fill paper-lined or greased 2-1/2 inch muffin cups until they are three-quarters full. 9. In another small bowl, combine the remaining ingredients and sprinkle evenly over the muffins. 10. Bake 15-20 minutes or until set. 11. Cool in the pan, set on a wire rack for five minutes. 12. Remove from the pan and serve warm.
Fresh Lemon Muffins
Ingredients
1/2 cup butter or margarine, softened 1/2 cup sugar 2 large eggs 1 tablespoon grated fresh lemon rind 3 tablespoons fresh lemon juice 1 cup all-purpose flour 1 teaspoon baking powder 1/8 teaspoon salt 2 tablespoons sugar 1/4 teaspoon cinnamon
Directions
1. Beat butter at medium speed with an electric mixer until creamy; gradually add 1/2 cup sugar, beating well. 2. Add eggs; stir in lemon rind and juice. 3. Combine flour, baking powder, and salt; add to butter mixture. 4. Spoon batter into greased muffin pans (or an ungreased non-stick pan you trust), filling 2/3 full. 5. Combine 2 Tbsp sugar and cinnamon; sprinkle evenly over batter. 6. Bake at 375F for 15 minutes. 7. Remove from pans immediately to cool.
Lemon Bars
Ingredients
For Base
2 cups sifted flour 1/2 cup powdered sugar 1 cup butter
For top
4 large beaten eggs 2 cups white sugar 1/3 cup lemon juice 1/4 cup flour 1/2 teaspoon baking powder 1/2 teaspoon fresh lemon rind (optional)
Directions
1. For the base mix the butter into the flour and sugar. 2. Mix with hands until it clings together. 3. Press into a 13 x 9 x 2-inch pan. 4. Bake at 350° for 20-25 minutes or until lightly browned. 5. For the filling, beat together eggs, sugar and lemon juice. 6. Sift together flour and baking powder. 7. Stir into egg mixture. 8. Pour over baked, cooled crust. 9. Bake at 350° for 25 minutes. 10. Cool and sprinkle with powdered sugar. 11. Cut into bars.
