Chocolate Meringue Pie

When I first met my husband he told me one of his favorite things his mom made was Chocolate Meringue Pie. She made it every Thanksgiving. I was able to try this pie that next Thanksgiving and instantly loved it. It has been a family favorite ever since and one that I now make for our own Thanksgiving meal.
Ingredients:
1 Baked Pie Crust
3 egg yolks
1 cup granulated sugar
1 1-ounce square Baker's Unsweetened Chocolate
1 Tbsp butter
2 Tbsp flour
1 cup lukewarm milk
1 tsp vanilla
for meringue:
3 egg whites
1/4 tsp cream of tarter
6 Tbsp sugar
1/2 tsp vanilla
1. Beat egg yolks, sugar and flour until creamy. 2. Melt butter and chocolate in microwave. Heat about 20 seconds and stir to soften chocolate. Heat more if needed--takes mine about 1 minute. 3. Put yolk mixture in pan. Add chocolate to egg yolk mixture in alternate with milk. Blend well. 4. Cook over medium low to low heat stirring constantly. Cook until very thick. 5. Test by putting a spoonful in the baked crust, let cool slightly and pull a knife through to see if line stays. 6. Add vanilla and cook just a little longer. 7. Pour into pie crust. Prepare Meringue: 1. Beat egg whites and cream of tarter until frothy. 2. Beat in sugar 1 Tbsp at a time, continue beating until stiff and glossy. Do not under beat. Rub a small about between 2 fingers to make sure there is no grit-you want all sugar dissolved. 3. Beat in vanilla 4 Heap meringue onto hot pie filling, spread over filling. Carefully seal meringue to edge of crust to prevent shrinking.

5. Bake about 10 minutes at 400 degrees, until delicate brown. Cool.
